You hold a key and talk. Blurt records with the phone’s microphone, transcribes the audio on the device, and hands the finished text to the keyboard so it lands in whatever app you were already typing in. An on-device model can tidy the result if you ask it to.
Audio and transcripts never leave your iPhone. That is not a policy we could quietly change in an update without you noticing — there is no transcription server to send audio to, and the keyboard extension contains no networking code whatsoever.

Blurt is made by Team Nebula. Support requests go to the same people who wrote the app. If you are reporting something that went wrong, the iOS version and what you were doing when it happened are the two details that make it fixable.
